For those who have to undo a lot (like me), it's super handy to just have a History (Window->History) tab open at all times. I rarely ever use ctrl+z in PS nowadays thanks to it. I just have it sandwiched between Navigator and Layers for easy access. 

Also, there's nothing wrong with having a lot of layers, so long as you eventually merge them to reduce memory load. Some people like things structured, some don't, I believe it's a matter of preference. Case in point: I occasionally end up with over 100 layers for big works, 80% of which get merged in process. It all depends on a lot of things, really, including your PC's capability.

Oh, and, you can always right click the Layers window itself (not the layer) and select "Clip Thumbnails to Layer Bounds" (also increase thumbnail size) to see what's on the layer more clearly in case you can't be bothered to name 'em all.
